Ingredients for 4 persons:
- 2 medium-sized fennels
- 2 oranges
- 30 black olives
- extra virgin olive
- salt
- pepper
Procedure:
- Begin the preparation of the orange and fennel salad by cleaning the fennels from the stems and washing them thoroughly to rid them of any remaining soil.
- Squeeze one of the two oranges to make the juice and put it in a small bowl into which you will also add some of our IGP Alma and if to your taste also a pinch of pepper.
- Cut the fennel into 4 pieces and then, with a well-sharpened knife or a mandoline, cut out many fairly thin slices that you are going to place in a medium-sized salad bowl.
- Peel the second orange, clean it well of all white parts, then divide it into wedges; finally, cut each wedge into 3 or 4 pieces and add them to the salad bowl with the sliced fennel.
- Pour the black olives into the bowl as well and then add some salt to your liking as well.
- Dress the orange and fennel salad with the juice of the orange and oil, mix well and add a few fennel leaves as well before serving at the table.
